FPGA beginner Elbert V2 Vs Mimas V2

I am new to FPGA but have 10 yrs of software development experience (C and C++),
I would like to expand my knowledge in FPGA both by passion and by wish to change the field. Could you please suggest which of the following product would be good for initiation Elbert V2 Vs Mimas v2 (or any other medium range product), given my background I may surpassing the capabilities of a board if I buy very basic one.
